Turkey Stuffed Bell Peppers




I LOVE these stuffed peppers.
I make a whole bunch and then get to savor them for a couple of days.
I like to  play around with the recipe a lot and add my own touch each time.
Adding corn is one of my favorites.
This time we used just green bell peppers and I added the leftover Black Bean and Quinoa Salad I made the other day. (scroll down)
Oh, my, yumminess. I think this one is a keeper!  I must try!

This is the basic recipe that I follow from Skinnytaste




Ingredients: 

  • 1 lb lean chopped turkey meat
  • 1 garlic, minced
  • 1/4 onion, minced
  • 1 tbsp chopped fresh cilantro or parsley
  • 1 tsp garlic powder
  • 1 tsp cumin powder
  • salt to taste
  • 3 large sweet red bell peppers, washed
  • 1 cup fat free chicken broth
  • 1/4 cup tomato sauce
  • 1 1/2 cups cooked rice
  • Olive oil spray
  • 1/4 cup reduced fat shredded cheese

Directions: 
    Heat oven to 400°. Spray a little olive oil spray in a medium size saute pan and heat on a medium flame. Add onion, garlic and cilantro to the pan. Saute about 2 minutes and add ground turkey. Season with salt and garlic powder, and cumin and brown meat for several minutes until meat is completely cooked through. Add 1/4 cup of tomato sauce and 1/2 cup of chicken broth, mix well and simmer on low for about 5 minutes. Combine cooked rice and meat together.

    Cut the bell peppers in half lengthwise, and remove all seeds. Place in a baking dish. Spoon the meat mixture into each pepper half and fill it with as much as you can. Placeall stuffed pepper halves on the baking dish and pour the remainder of the chicken broth on the bottom of the pan. Cover tight with aluminum foil and bake for about 35 minutes. Top with shredded cheddar cheese and enjoy.

    Black Bean and Quinoa Salad



    This Black Bean and Quinoa Salad is SO YUMMY, my family can't get enough of it!
    Make one big batch or you can cut the recipe in half.

    Perfect to make at the beginning of the week to have on hand for a quick and grab side dish.

    Enjoy!
    Serves 12 (1 cup each) Prep Time: 30min. Cooking Time: 12 min.
    Container equivalents (for my 21 Day Fixers): 1 green, 2 yellow, 1.5 teaspoons 
    INGREDIENTS
    1/3 cup Fresh lime juice
    1 Tbsp. ground cumin
    1 Tbsp. sea salt (or Himalayan salt)
    1/3 cup olive oil
    2 cans (15-oz. ea.) black beans drained, rinsed
    4 1/2 tsp. red wine vinegar (ground pepper to taste; optional)
    4 cups water
    2 cups dry quinoa, rinsed
    1 medium red bell pepper, finely chopped
    1 medium orange bell pepper, finely chopped
    1 medium yellow bell pepper, finely chopped
    1 (10-oz.) bag frozen corn, thawed
    1 bunch fresh cilantro, finely chopped
    DIRECTIONS
    -Combine lime juice, cumin, and salt in a medium bowl; whisk to blend.
    -Slowly add oil, while whisking constantly. Set aside.
    -Combine beans, vinegar, and pepper (if desired) in a medium bowl; mix well. Set aside.
    -Bring water to a boil in a medium saucepan over high heat.
    -Add quinoa. Reduce heat to a medium-low; cook, covered, for 10-12 minutes, or until all the water has been absorbed. Remove from heat. Cool for 15-30 minutes. Set aside.
    -Place cooled quinoa in a large bowl. Fluff with a fork.
    -Add bell peppers, corn, cilantro, bean mixture, and dressing; toss gently to blend.

    Spinach and Blue Cheese Salad

    Looking for a simple, DELICIOUS salad to make?
    I guarantee your family and friends will LOVE it.
    I get asked for this recipe ALL the time and it's one of my "signature" dishes that I make year round.
    Enjoy and let me know if you make it! 


    SPINACH AND BLUE CHEESE SALAD 
    TOTAL TIME: Prep/Total Time: 15 min.
    MAKES: 12 servings
    Ingredients
    1/2 cup red currant jelly
    3 tablespoons balsamic vinegar
    6 cups fresh baby spinach
    2 pints fresh strawberries, quartered
    1 cup mandarin oranges, drained
    1/2 medium red onion, thinly sliced
    1/2 cup crumbled blue cheese
    1/2 cup pine nuts, toasted ( I also like walnuts or pecans)
    Directions
    For dressing, heat jelly in a small saucepan over low heat, stirring until smooth. Remove from the heat; stir in vinegar.
    In a large bowl, combine the spinach, strawberries, oranges, onion and blue cheese. Drizzle with dressing and toss to coat. Sprinkle with pine nuts.

    I even eat them for breakfast they are so delicious. It's like a breakfast cereal packed in a cookie! Perfect!

    STUFFED POBLANO PEPPERS

    WHAT'S FOR DINNER?


    Shared with my fitness groups last night on Facebook and wanted to share with all of you. We made these last night. They are one of our favorite things to make on the grill! And I make them 21 Day Fix approved if you are following that program!
    It's simple... 
    Pasilla or Anaheim peppers
    Pepper Jack Cheese, shredded
    Cooked chicken, shredded (rotisserie chicken bought from the store is the best!)
    Slice peppers down the middle, remove seeds.
    Stuff peppers with chicken and cheese.
    Wrap in tinfoil tightly.
    Medium high heat on the grill. Rotating for about 20 min or so.
    Chicken is already cooked, so you're just cooking the peppers and melting the cheese so time varies.
    Soooooooooo goood!! And I ask my husband to make them for me all the time wink emoticon

    WEDNESDAY WORKOUT


    I had to throw it back today.
    I was going through some old pics and came across some where I incorporated my daughter, who was less than 1 year at the time. It was so difficult to find the time to workout, especially since Lilah was (and still is very clingy) But I just used her as my weights. Which, by the way, is sometimes even harder! And even though I did the original Insanity in the beginning, I usually like to pick workouts that are 30 minutes or less. In fact, I still do. Because I know what it's like to be a busy mom! I need to get my workout done as quick as possible. (Focus T25 is my ABSOLUTE favorite and go to workout of all time)
    It took me less than a year to lose all of my pregnancy weight PLUS 10 more pounds, weighing less than I had in 8 years.
    I know working out at home doesn't work for some, but for me, I couldn't live without it.
    And I'll probably never step foot in a gym again, unless it's to teach Cize  wink emoticon (6 days til I get certified, wooohooo)
    If you've never tried an at home workout, give it a try! It just might get you in the best shape of your life. It did for me smile emoticon

    Nutrition is SO important!

    I shared this with my fitness accountability group on Facebook and wanted to share with all of you...
    "Cassandra, why do you focus on nutrition SOOOO much?"
    Well, because honestly, in my opinion, it is just as important if not MORE important than just exercising and working out. This is why I always, always, always suggest to do clean eating groups and have nutrition accountability groups. You can workout as much and as hard as you want BUT if your nutrition is not in check and you eat like crap, all that hard work won't matter one single bit. You HAVE to eat right.
    You may think to yourself, "Well, I eat healthy." 
    But really, do you? Are you absolutely sure you're not sneaking in little bites here and there, because honestly they add up. Are you drinking anything other than water? That adds up. Are you really watching how much you serve yourself or are you just eating however much you want EVEN though it's healthy? THAT adds up.
    Trust me, I think I've tried a dozen diet fads (not eating, no carbs, coffee and cigarettes, just veggies, diet pills) but nothing has ever worked better than simple eating clean and portion control. And the program that I use is the best nutrition plan I have ever come across. The portion control is soooo key! It is a balanced eating plan. Lots of veggies, lean proteins, good carbs (there is a difference) fruits and small portions of good fats.

    IF ANYTHING, if you can't exercise right now, focus on your nutrition!!! YOU WILL LOSE WEIGHT. When I was doing my last fitness program, I was seriously not being truthful with myself about what I was eating. I was working my A** off BUT it wasn't until I cleaned up my diet, that I finally started seeing my hard work.
    If you want to know exactly what I do, I will teach you! It will literally change the way you look at food and you'll learn to be a better eater! I have groups forming now and my next one starts on June 1.

    What's for dinner? - Crockpot Taco Chili

    What's for dinner?!

    Came across this simple recipe that I've made lots of times and wanted to share. Simple and quick.
    Prep:20 min
    Cook:4 hr (low) or 2 hr (high)
    1 to 1 1/2 lbs of ground turkey meat
    2 15 oz cans diced tomatoes (I use fire roasted)
    1 15 oz can red kidney beans (or any beans you like)
    1 15 oz can of whole kernel corn (or frozen)
    1 1.25 oz envelope taco seasoning mix
    1 green bell pepper diced (optional)
    1 jalapeño, diced (optional)
    1. In a large skillet, brown turkey beef over medium heat. Drain off fat.
    2. In crockpot, combine meat, tomatoes, beans, corn, taco seasoning, green bell pepper, and jalapeño. Mix.
    3. Cover and cook on low for 4 hrs or high for 2 hrs. 
    Enjoy!! So good!!

    TRANSFORMATION TUESDAY - MY STORY


    TRANSFORMATION TUESDAY:
    These pics are so hard for me to post but I wanted to share my story and my journey from the past couple of months. I haven't been active on this blog because I've been through a tough time lately. And now I'm ready to tell my story. 
    MY STORY
    In September of 2014, we got one of the biggest surprises of our lives when I found out I was pregnant with our 3rd baby. We totally weren’t expecting or planning for it but we quickly got excited and laughed about how big our family was about to become. So we started planning for our future. We bought a bigger vehicle, went through old baby clothes wondering if it was going to be a boy or girl, took pictures of my growing belly, hung up our ultrasounds after hearing the heartbeat. I started to feel the baby kick and move pretty early on. It’s always the most amazing feeling in the world. I was going to be a mom of 3, I couldn’t believe it!

    I had a pretty rough pregnancy, the first 3 months, I was extremely nauseous with morning sickness 24/7. It was so awful, I could barely get out of bed. Finally in the 4th month, in the 2nd trimester, I started to feel better. I started to get that “pregnancy glow” and my belly was proudly on display. Things were looking up and I was almost halfway through my pregnancy. We were over the moon! And then it ended…..


    On Dec 31, 2014, when I was 19 weeks pregnant, almost 5 months along, we lost our precious baby. We woke up on New Year’s Day 2015, heartbroken, empty and with the most enormous, stabbing, painful grief I could NEVER imagine.
    I cried. Every single day. I still cry. It’s the hardest thing I’ve ever been through in my entire life. 
    Depressed, broken, grieving, numb….for weeks I just sat. And whenever I looked in the mirror, I would cry some more. With every pregnancy, you gain weight. Well, I did. And it made me even more depressed because I had no baby to show for it.
    After about 3 weeks, I looked over at my husband and said, I need to do something. I need to dive into something that will take my mind off of this because if I don’t, I’m going to go into a downward spiral and I have 2 kids and a husband that still need me. I needed to heal my body. Ironically, Insanity Max 30 just came out. Planning on doing it after I had the baby, I immediately said that is what we are going to do. I lost all of my pregnancy weight from my 2nd baby with Insanity and T25 and it was life changing for me. And that’s exactly what I needed at the moment. 
    So that’s what we did. Not having been able to work out for months prior because of my morning sickness, I was a bit out of shape . The first couple of days I cried after the workout. It was exhausting and my body seemed so foreign to me. Taking my before pictures was excruciating and I hated it. I didn't even recognize myself.
    It…was…hard.
    But I pushed myself. I got up, no matter what, and worked out. Some days were robotic because I couldn't even think. I just did it. And then little by little, I got stronger. Don’t get me wrong, it was never easy. But I was able to do more and more push ups each time. My max out time got longer. TWICE I made it through the entire 30 min without stopping. I started to smile again. I actually looked forward to working out every morning with my husband because I knew for at least 30 min, I didn’t have to think about anything. And we were doing this together. I knew he needed this as much as I did. 
    We finished the entire program last week. And I’m thankful. I had every excuse in the world to not do anything but I made myself get up every day, even when I didn’t want to. I ended up losing only about 7 pounds but I lost over 9 inches all around and even gained 1/4 inch in my arms (from the gazillion push ups! ) I'm not at my goal weight yet but I know I can get there and I will. No, I don’t have a six pack. I’m not trying to look like a fitness model. I’m just trying to feel good in my skin again. And I think I'm achieving that. This challenge has helped me heal not just physically but mentally and emotionally as well. The happiness it brought me means so much more to me than any number. 
    I still struggle with our loss every day. It’s been only about 4 months and the pain is still raw. But I keep putting one foot in front of the other every day and keep going. Not just for my family but for me, too. 
    So today... with some tears behind my eyes, I smile.
    I encourage you to take on a challenge like I did. Just do it!!
